  • purple potatoes (300g)
  • dragon fruit (1 large)
  • coconut milk (200ml)
  • lemongrass (2 stalks)
  • lime leaves (3 leaves)
  • kaffir lime zest (from 1 lime)
  • lemongrass powder (1 tsp)
  • coconut sugar (2 tbsp)
  • salt (to taste)

Preparation

To start, peel and dice the purple potatoes into small cubes. Cut the dragon fruit in half and scoop out the flesh, then dice it into similar-sized cubes as the potatoes.

In a pot, combine the coconut milk, lemongrass, lime leaves, kaffir lime zest, lemongrass powder, coconut sugar, and a pinch of salt. Bring the mixture to a simmer over medium heat, stirring occasionally.

Add the diced purple potatoes and dragon fruit to the pot and let them cook until the potatoes are tender, about 15-20 minutes.

Once cooked, remove the lemongrass and lime leaves from the pot. Using a wooden spoon, lightly mash the potatoes and dragon fruit to create a creamy consistency. Adjust the seasoning with more salt if needed.

Serve the dish hot, garnished with a sprinkle of lemongrass powder on top for an extra burst of flavor.
