Introduction

Hey there foodies! Today, I’m excited to share a unique and flavorful dish that I created while experimenting in the kitchen. This recipe combines unexpected ingredients to create a dish that will surprise and delight your taste buds. Let’s dive in!

Ingredients

  • purple potatoes (300g)
  • dragon fruit (1 large)
  • coconut milk (200ml)
  • lemongrass (2 stalks)
  • lime leaves (3 leaves)
  • kaffir lime zest (from 1 lime)
  • lemongrass powder (1 tsp)
  • coconut sugar (2 tbsp)
  • salt (to taste)

Kitchen Tools

  • chef’s knife
  • cutting board
  • pot
  • wooden spoon
  • grater
  • strainer

Preparation

To start, peel and dice the purple potatoes into small cubes. Cut the dragon fruit in half and scoop out the flesh, then dice it into similar-sized cubes as the potatoes.

In a pot, combine the coconut milk, lemongrass, lime leaves, kaffir lime zest, lemongrass powder, coconut sugar, and a pinch of salt. Bring the mixture to a simmer over medium heat, stirring occasionally.

Add the diced purple potatoes and dragon fruit to the pot and let them cook until the potatoes are tender, about 15-20 minutes.

Once cooked, remove the lemongrass and lime leaves from the pot. Using a wooden spoon, lightly mash the potatoes and dragon fruit to create a creamy consistency. Adjust the seasoning with more salt if needed.

Serve the dish hot, garnished with a sprinkle of lemongrass powder on top for an extra burst of flavor.

Tips

For an extra tropical twist, try adding a splash of fresh lime juice to the dish just before serving. It will brighten up the flavors and bring a zesty kick to the creamy coconut base.

Serving

This unique purple potato and dragon fruit curry weighs approximately 700g once cooked. It serves 4 people, with each serving weighing around 175g. This flavorful dish is approximately 250 calories per serving.

I hope you enjoy trying out this unexpected and delicious recipe. Feel free to get creative and make it your own by adding your favorite spices or vegetables. Happy cooking!
