Delicious Pumpkin-Spiced Cauliflower Gratin

Today, I am excited to share with you my latest fall-inspired recipe for a mouth-watering Pumpkin-Spiced Cauliflower Gratin. This dish is perfect for cozy evenings spent indoors as the weather starts to cool down. The combination of creamy, cheesy goodness with a hint of warming spices will surely become a new favorite at your dinner table.

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 200g pumpkin puree
  • 150ml heavy cream
  • 100g gruyere cheese, shredded
  • 50g parmesan cheese, grated
  • 2 tsp pumpkin pie spice
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 50g breadcrumbs
  • 50g butter, melted

To start, preheat your oven to 375°F (190°C). In a saucepan, combine the pumpkin puree, heavy cream, garlic powder, pumpkin pie spice, salt, and pepper over medium heat. Stir until well combined and heated through.

In a large mixing bowl, toss the cauliflower florets with the shredded gruyere cheese. Pour the pumpkin-spice cream mixture over the cauliflower and cheese, making sure everything is evenly coated. Transfer the mixture to a greased baking dish.

In a separate bowl, mix together the breadcrumbs and grated parmesan cheese. Sprinkle this mixture over the cauliflower in the baking dish. Drizzle the melted butter on top.

Bake the Pumpkin-Spiced Cauliflower Gratin in the preheated oven for 30-35 minutes, or until the cauliflower is tender and the top is golden brown and bubbly. Remove from the oven and let it cool slightly before serving.

This dish weighs approximately 1200g after cooking and serves 6. Each serving is around 200g and contains approximately 320 calories.

One unique tip for this recipe is to sprinkle a little extra pumpkin pie spice on top before serving for an additional burst of fall flavor.
