Aromatic Lamb Shank Stew

Today, I am excited to share my aromatic lamb shank stew recipe. This hearty dish is perfect for cozy nights in or special gatherings with loved ones. The combination of tender lamb shanks, fragrant spices, and hearty vegetables creates a dish that is sure to impress.

Ingredients:

  • 2 lamb shanks (about 700g)
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 2 tomatoes, diced
  • 1 cup chicken broth
  • 1/2 cup red wine
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil

To start, preheat the oven to 350°F (175°C). Season the lamb shanks generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Brown the lamb shanks on all sides, then remove from the skillet and set aside.

In the same skillet, add the onion, carrots, and celery. Cook until the vegetables start to soften, about 5 minutes. Add the garlic, cumin, coriander, and cinnamon, and cook for another minute until fragrant. Pour in the red wine to deglaze the pan, scraping up any browned bits.

Transfer the vegetable mixture to a large saucepan. Add the diced tomatoes, bay leaves, and chicken broth. Place the browned lamb shanks on top of the vegetables. Cover the saucepan and transfer it to the preheated oven. Let the stew cook for 2-2.5 hours, or until the lamb is fork-tender.

Once the lamb shanks are tender, remove the saucepan from the oven. Discard the bay leaves. Taste and adjust the seasoning with salt and pepper, if needed. Serve the aromatic lamb shank stew hot, garnished with fresh herbs if desired.
