Aromatic Lemongrass Coconut Curry with Purple Cauliflower

Today, I’m excited to share a vibrant and aromatic dish that is perfect for cozy nights at home. This lemongrass coconut curry with purple cauliflower is a unique blend of flavors and colors that will surely impress your taste buds.

Ingredients:

  • purple cauliflower (300g)
  • lemongrass stalks (2)
  • coconut milk (400ml)
  • chili peppers (2)
  • garlic cloves (3)
  • onion (1)
  • ginger (30g)
  • lime (1)
  • cilantro (a handful)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • pot
  • wooden spoon

Preparation:

To start, chop the purple cauliflower into florets and set aside. Finely chop the lemongrass, chili peppers, garlic, onion, and ginger. In a pot, heat some coconut milk over medium heat and add the chopped aromatics. Sauté until fragrant, then add the purple cauliflower florets.

Let the curry simmer for about 15 minutes until the cauliflower is tender. Squeeze in the juice of a lime and top with fresh cilantro before serving. The tangy lemongrass and creamy coconut milk create a delightful balance of flavors in this dish.

Tips:
