As the cooler weather of autumn rolls in, I find myself craving warm, comforting desserts that perfectly balance sweetness and savory flavors. Today, I’m excited to share with you my recipe for a Caramelized Pear & Brie Galette. This unique dessert is a delightful mix of juicy pears, gooey melted brie, and a hint of caramelization that will have your taste buds dancing.

To start, gather the following ingredients:

  • 250g unbleached all-purpose flour
  • 150g cold unsalted butter, cubed
  • 60ml cold water
  • 3 ripe pears, peeled and sliced
  • 100g brie cheese, sliced
  • 50g brown sugar
  • 30ml honey
  • 1 tsp ground cinnamon
  • 1 egg, beaten

Now, let’s talk about the kitchen tools you’ll need:

  • mixing bowl
  • pastry cutter
  • rolling pin
  • baking sheet

Start by preheating your oven to 375°F (190°C). In a mixing bowl, combine the flour and cold, cubed butter. Use a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs. Slowly add the cold water, a little at a time, until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and chill it in the refrigerator for 30 minutes.

While the dough is chilling, prepare the filling by combining the sliced pears, brie cheese, brown sugar, honey, and ground cinnamon in a bowl. Toss the ingredients together until well combined.

Once the dough has chilled, remove it from the refrigerator and roll it out on a lightly floured surface into a circle about 12 inches in diameter. Transfer the dough to a baking sheet lined with parchment paper. Arrange the pear and brie mixture in the center of the dough, leaving a border around the edges. Fold the edges of the dough over the filling, pleating as you go.

Brush the edges of the galette with the beaten egg to give it a golden sheen. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Once the galette is finished baking, allow it to cool slightly before slicing and serving. This Caramelized Pear & Brie Galette weighs approximately 850g, serves 6, and each serving is around 140g. One serving is approximately 320 calories.
