Today’s Culinary Creation: Minty Watermelon Gazpacho

I’m excited to share with you all a refreshing and unique recipe that’s perfect for a hot summer day – my Minty Watermelon Gazpacho. This dish combines the sweet and juicy flavors of watermelon with the crispness of cucumbers and a hint of mint, creating a chilled soup that’s both satisfying and refreshing.

To start off, gather the following ingredients:

  • 1 small watermelon, diced (about 500g)
  • 2 large cucumbers, peeled and chopped (about 300g)
  • 1/2 cup fresh mint leaves
  • 1/2 small red onion, diced
  • Juice of 2 limes
  • 1 small jalapeno, seeds removed and diced
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Make sure to have the following kitchen tools on hand:

  • blender
  • knife
  • cutting board
  • large bowl

Start by combining the diced watermelon, chopped cucumbers, mint leaves, red onion, lime juice, jalapeno, garlic, salt, and pepper in a large bowl. Toss everything together gently to mix the flavors.

Next, transfer the mixture to a blender and blend until smooth. You may need to do this in batches depending on the size of your blender. Once smooth, pour the soup back into the bowl and refrigerate for at least an hour to chill.

Before serving, stir in the olive oil and adjust the seasoning with more salt and pepper if needed. Ladle the gazpacho into bowls and garnish with fresh mint leaves. Enjoy this cool and flavorful soup on a hot summer day!

The total weight of the cooked dish is approximately 1200g, with about 4 servings. Each serving is around 300g and has an estimated calorie count of 150 per serving.

One clever tip for this recipe is to add a splash of balsamic vinegar before blending for an extra depth of flavor. It adds a subtle tanginess that complements the sweetness of the watermelon beautifully.

I hope you give this Minty Watermelon Gazpacho a try and make it your own by adjusting the ingredients to suit your taste preferences. Stay cool and enjoy!
