This dish is perfect for adding a touch of tropical flair to your dinner table, whether you’re looking to try something new or simply craving a unique and delicious meal. Let’s dive into this flavorful and aromatic mango chicken curry recipe!

Ingredients:

  • 400g chicken breast, diced
  • 1 ripe mango, peeled and diced
  • 400ml coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

To start, heat olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides, then remove from the skillet and set aside.

In the same skillet, add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent, then add the curry powder, cumin, coriander, chili flakes, salt, and black pepper. Cook for another minute until fragrant.

Pour in the coconut milk and diced mango, stirring to combine. Bring the mixture to a simmer, then add the cooked chicken back to the skillet. Allow the curry to simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

Once the curry is ready, remove it from the heat and garnish with fresh cilantro. Serve hot over steamed rice or with naan bread for a delicious and satisfying meal.

Tips:
