A Sweet Surprise: Lavender Honey Cheesecake

Today, I am excited to share a unique dessert recipe that combines the delicate floral notes of lavender with the sweetness of honey. This Lavender Honey Cheesecake is perfect for a special occasion or just to treat yourself to something truly indulgent.

Ingredients:

  • 350g cream cheese
  • 150g lavender honey
  • 200g Greek yogurt
  • 3 eggs
  • 100g butter
  • 100g sugar
  • 1 tsp vanilla extract
  • 200g digestive biscuits
  • 1 tbsp dried lavender

Kitchen Tools:

  • food processor
  • springform pan
  • whisk
  • saucepan

To begin, preheat your oven to 350°F (180°C). In a food processor, crush the digestive biscuits until they resemble fine crumbs. Melt the butter in a saucepan, then mix it with the biscuit crumbs. Press this mixture into the base of a greased springform pan to form the cheesecake crust.

In a mixing bowl, combine the cream cheese, sugar, and lavender honey. Add in the Greek yogurt, eggs, and vanilla extract, mixing until smooth. Gently fold in the dried lavender to infuse the cheesecake with a subtle hint of floral flavor.

Pour the cheesecake mixture over the crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set. Allow the cheesecake to cool completely before refrigerating for at least 4 hours or overnight.

Once chilled, remove the Lavender Honey Cheesecake from the springform pan and slice into portions. Each serving will weigh approximately 150g and will have around 350 calories.

One clever tip for this dessert is to garnish each slice with a drizzle of extra lavender honey and a sprinkle of fresh lavender petals for a beautiful presentation and an extra burst of flavor.
