Today, I wanted to share a unique dessert recipe that combines two unexpected ingredients – lavender and chocolate. The floral notes of the lavender beautifully complement the richness of the chocolate, creating a decadent treat perfect for any special occasion.

Ingredients:

  • 200g dark chocolate
  • 120ml heavy cream
  • 1 tbsp dried lavender buds
  • 30g unsalted butter
  • for dusting

Kitchen Tools:

  • saucepan

  • fine mesh strainer
  • spatula

Start by heating the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove the saucepan from heat and add the dried lavender buds. Let the mixture steep for 10 minutes to infuse the cream with the lavender flavor.

After the steeping time, strain out the lavender buds using a fine mesh strainer, pressing down to extract as much flavor as possible. Return the lavender-infused cream to the saucepan and bring it back to a simmer.

Place the dark chocolate in a mixing bowl. Pour the hot cream over the chocolate and let it sit for a minute to soften the chocolate. Gently whisk the mixture until smooth and shiny. Add the unsalted butter and continue whisking until fully incorporated.

Cover the bowl with plastic wrap, ensuring that the wrap touches the surface of the chocolate mixture to prevent a skin from forming. Chill the mixture in the refrigerator for at least 2 hours, or until firm enough to scoop.

Once the chocolate mixture has chilled, use a spoon or a small scoop to form truffle-sized balls. Roll each ball in cocoa powder to coat and place on a parchment-lined tray. Chill the truffles in the refrigerator for another 30 minutes before serving.

The total weight of the cooked dish is approximately 400g, with 20 servings at an average weight of 20g per serving. Each serving contains approximately 90 calories.

Clever Tip:

For an extra special touch, try sprinkling a pinch of sea salt over the truffles before chilling them. The salt will enhance the flavors and add a subtle contrast to the sweetness of the chocolate.
