Ah, the sweet summer days call for a tropical treat like no other. As the warm breeze rustles through the palm trees, I am inspired to share my newest creation: Pineapple Coconut Crumble. The perfect dessert to transport you to a sunny beach getaway with every bite.

Ingredients:

  • 200g fresh pineapple (diced)
  • 150ml coconut milk
  • 50g coconut sugar
  • 100g all-purpose flour
  • 50g shredded coconut
  • 100g butter (cold, cubed)
  • 50g brown sugar
  • 1/4 tsp salt

Start by preheating your oven to 350°F (180°C). In a mixing bowl, combine the diced pineapple, coconut milk, and coconut sugar. Mix well and pour the mixture into a greased baking dish.

Next, in a separate mixing bowl, combine the all-purpose flour, shredded coconut, cold cubed butter, brown sugar, and salt. Use your hands to rub the butter into the dry ingredients until it resembles coarse crumbs. Sprinkle this crumble mixture over the pineapple mixture in the baking dish.

Place the Pineapple Coconut Crumble in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the pineapple is bubbling. Let it cool slightly before serving.

This dessert weighs approximately 700g total and serves 6. Each serving is around 117g with an estimated calorie count of 250 per serving.

One clever tip for this recipe is to sprinkle a little extra shredded coconut on top of the crumble before baking for an added burst of tropical flavor and texture.
