Whip Up a Flavorful Surprise: Purple Potato and Kiwifruit

Today, I’m excited to share a brand new recipe that I’ve been experimenting with in my kitchen. This dish combines unexpected flavors to create a truly unique experience that I think you’ll love.

For this recipe, you’ll need the following ingredients:

  • purple potatoes (300g)
  • watermelon radishes (150g)
  • kiwifruit (100g)
  • goat cheese (50g)
  • pistachios (25g)
  • honey (15ml)
  • olive oil (30ml)
  • salt (to taste)
  • black pepper (to taste)

To prepare this dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • mixing bowl
  • whisk

Start by boiling the purple potatoes until they are tender. Allow them to cool slightly before cutting them into bite-sized pieces. Thinly slice the watermelon radishes and peel and dice the kiwifruit. In a mixing bowl, combine the potatoes, radishes, kiwifruit, crumbled goat cheese, and chopped pistachios.

In a small bowl, whisk together the honey, olive oil, salt, and black pepper to create a dressing. Drizzle the dressing over the salad and gently toss to combine all the ingredients. Adjust the seasoning to taste, adding more salt or pepper if needed.

Once everything is well combined, transfer the salad to a serving dish. This unique combination of flavors and textures is sure to impress your guests. The sweet and tangy kiwifruit pairs perfectly with the earthy purple potatoes and creamy goat cheese.
