Ingredients:

  • rice noodles (200g)
  • mango (1, diced)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • bell pepper (1, sliced)
  • onion (1, sliced)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • soy sauce (2 tbsp)
  • lime (1, juiced)
  • cilantro (for garnish)

To start, cook the rice noodles according to the package instructions. Drain and set aside. In a saucepan, heat some oil and sauté the garlic and ginger until fragrant. Add the sliced onion and bell pepper, cooking until softened.
