Today, I am excited to share with you a unique and flavorful dish inspired by a recent trip to a local farmers market. The vibrant colors and fresh produce I found there sparked my creativity, leading me to create this innovative recipe that I can’t wait for you to try.

Ingredients:

  • purple cauliflower (300g)
  • blood oranges (2)
  • black quinoa (150g)
  • pistachios (50g)
  • honey (2 tbsp)
  • balsamic vinegar (3 tbsp)
  • olive oil (4 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • medium saucepan
  • citrus juicer
  • mixing bowl
  • roasting pan

Preparation:

1. Preparing the Ingredients

Start by preheating your oven to 400°F (200°C). Cut the purple cauliflower into florets and place them on a roasting pan. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and roast in the oven for about 20 minutes until tender.

While the cauliflower is roasting, rinse the black quinoa under cold water. In a medium saucepan, combine the quinoa with 300ml of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the quinoa is cooked through.

2. Assembling the Salad

In a mixing bowl, whisk together the remaining olive oil, balsamic vinegar, and honey to make the dressing. Peel the blood oranges and cut them into segments, then add them to the bowl. Add the cooked quinoa, roasted purple cauliflower, and chopped pistachios. Toss everything together until well mixed.

Tips:

For an extra burst of flavor, try adding a sprinkle of crumbled feta cheese or a handful of pomegranate seeds to the salad before serving. The tanginess of the feta or the juicy sweetness of the pomegranate seeds will take this dish to the next level!
