Today, I’m excited to share with you my latest creation: The Ultimate Veggie Burger! This hearty and flavorful burger is perfect for a summer BBQ or a quick weeknight dinner. Packed full of delicious and nutritious ingredients, this recipe is sure to satisfy even the most die-hard meat lover.

Ingredients:

  • sweet potato, peeled and diced
  • black beans, drained and rinsed
  • cooked quinoa
  • chickpea flour
  • garlic, minced
  • smoked paprika
  • cumin
  • cayenne pepper
  • to taste
  • olive oil

Kitchen Tools:

  • food processor
  • baking sheet
  • large bowl
  • skillet

I start by preheating the oven to 400°F and lining a baking sheet with parchment paper. I then roast the diced sweet potato in the oven for about 20 minutes, or until tender.

While the sweet potato is roasting, I pulse the black beans in a food processor until slightly mashed. In a large bowl, I combine the mashed black beans, cooked quinoa, chickpea flour, minced garlic, smoked paprika, cumin, cayenne pepper, salt, and pepper. Once the sweet potato is done roasting, I add it to the bowl and mix everything together until well combined.

Next, I form the mixture into patties and heat olive oil in a skillet over medium heat. I cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.

For serving, I like to toast some whole grain buns and top each patty with avocado slices, lettuce, tomato, and a dollop of vegan mayo. This burger is perfect for a meatless Monday dinner or a weekend BBQ with friends.

The approximate total weight of the cooked dish is 800 grams, with 4 servings. Each serving weighs approximately 200 grams, with an estimated calorie count of 300 per serving.

Pro tip: For an extra kick of flavor, try adding a tablespoon of soy sauce to the burger mixture before cooking. It adds a savory umami depth that takes this veggie burger to the next level.
