Today, I’m excited to share a recipe inspired by the vibrant colors and fresh flavors found in the gardens of the Impressionist painter Claude Monet. This pasta dish is a celebration of summer produce and artistically combines various textures and tastes for a truly unique culinary experience.

Ingredients:

  • linguine (200g)
  • cherry tomatoes (150g)
  • zucchini (1 medium)
  • bell pepper (1)
  • fresh basil leaves (a handful)
  • pine nuts (30g)
  • olive oil (30ml)
  • garlic cloves (2)
  • lemon zest (from 1 lemon)
  • salt and pepper to taste

Kitchen Tools:

  • pot for boiling water
  • skillet
  • colander
  • garlic press
  • lemon zester

To start, cook the linguine according to the package instructions until al dente. While the pasta is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant. Slice the zucchini, bell pepper, and cherry tomatoes, then add them to the skillet. Cook until the vegetables are tender but still have a bit of crunch.

Once the pasta is done cooking, drain it in a colander and add it to the skillet with the vegetables. Toss everything together and season with salt, pepper, and lemon zest. Tear the fresh basil leaves and sprinkle them on top along with the pine nuts for added crunch.

For a final touch, drizzle a bit more olive oil over the pasta before serving. This dish is best enjoyed fresh and warm, allowing the flavors to meld together beautifully.

The total weight of the cooked dish is approximately 700g, with 4 servings at around 175g each. One serving of this Monet’s Garden Pasta is roughly 350 calories.
