To begin, gather the following ingredients: ripe mango (200g), rice noodles (100g), red bell pepper (100g), cucumber (100g), fresh cilantro (a handful), fresh mint leaves (a handful), roasted peanuts (50g), red chili (1 piece), lime (1 piece), fish sauce (15ml), soy sauce (15ml), honey (15ml), and sesame oil (15ml).

For kitchen tools, you will need:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • large mixing bowl

Start by cooking the rice noodles according to the package instructions, then rinse them under cold water and set them aside. Next, peel the mango and cut it into thin strips. Julienne the red bell pepper and cucumber, and finely chop the red chili (remove the seeds if you prefer less heat). Roughly chop the cilantro, mint leaves, and roasted peanuts.

In a large mixing bowl, combine the cooked noodles, mango strips, red bell pepper, cucumber, cilantro, mint leaves, and roasted peanuts. In a separate small bowl, whisk together the fish sauce, soy sauce, honey, sesame oil, and the juice of one lime. Pour the dressing over the salad and toss everything together until well coated.

The spicy mango noodle salad is now ready to be enjoyed! The combination of juicy mango, crunchy vegetables, aromatic herbs, and spicy chili creates a harmonious blend of flavors and textures that will leave you wanting more.
