Mango-Coconut Curry Noodle Soup

As the weather starts to cool down and fall approaches, I find myself craving cozy and flavorful dishes that warm me from the inside out. Today, I’m excited to share a unique recipe for Mango-Coconut Curry Noodle Soup that combines a variety of bold and unexpected flavors for a truly unforgettable meal.

Ingredients:

  • yellow curry paste (50g)
  • coconut milk (400ml)
  • mango (1, peeled and diced)
  • rice noodles (200g)
  • bell peppers (2, thinly sliced)
  • onion (1, thinly sliced)
  • vegetable broth (500ml)
  • tofu (200g, cubed)
  • lime (1, juiced)
  • cilantro (for garnish)

Kitchen Tools:

  • large pot
  • sauté pan
  • chef’s knife
  • cutting board
  • ladle

To start, heat a large pot over medium heat and add the yellow curry paste. Stir and cook for a minute until fragrant. Then, pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.

Add the diced mango, sliced bell peppers, and onion to the pot. Let everything cook together for about 10 minutes until the vegetables are tender. In the meantime, cook the rice noodles according to the package instructions in a separate pot.

Once the vegetables are cooked, add the cubed tofu to the soup and let it heat through for a few minutes. Squeeze in the juice of one lime for a burst of freshness.

To serve, divide the cooked rice noodles into bowls and ladle the mango-coconut curry soup over the top. Garnish with fresh cilantro for a pop of color and flavor.

This Mango-Coconut Curry Noodle Soup weighs approximately 2500g once cooked, serves 6 people, with each serving weighing around 415g. Each serving is estimated to have 350 calories.

One clever tip for this recipe is to add a sprinkle of toasted coconut flakes on top for an extra crunch and a hint of sweetness that perfectly complements the savory curry flavors.

I hope you give this Mango-Coconut Curry Noodle Soup a try and enjoy the unique combination of flavors it has to offer. Feel free to make it your own by adjusting the spice level or adding your favorite vegetables. Happy cooking!
