As the brisk autumn air settles in, I find myself craving warm, comforting dishes that remind me of cozy nights by the fireplace. Today, I’m excited to share with you my unique take on a classic Italian dish – Turmeric-infused Pumpkin Risotto. This fusion of flavors will tantalize your taste buds and warm your soul on chilly evenings.

For this recipe, you will need the following ingredients:

  • 200g Arborio rice
  • 300g pumpkin, diced
  • 1 tsp turmeric powder
  • 400ml coconut milk
  • 1L vegetable broth
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 50g Parmesan cheese, grated
  • Handful of fresh parsley, chopped
  • Salt and pepper to taste

You will also need the following kitchen tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board
  • grater

Start by heating the vegetable broth in a saucepan over medium heat. In another saucepan, heat some olive oil and sauté the onion and garlic until they become translucent. Add in the Arborio rice and toast it for a couple of minutes until it turns slightly golden.

Next, stir in the diced pumpkin and turmeric powder, coating everything evenly. Begin ladling in the warm vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 20 minutes.

Once the risotto reaches the desired consistency, pour in the coconut milk and simmer for another 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. Remove the risotto from the heat and stir in the grated Parmesan cheese until it’s melted and creamy.

To serve, ladle the warm Turmeric-infused Pumpkin Risotto into bowls and garnish with fresh parsley. The creamy texture, earthy pumpkin, and aromatic turmeric will create a symphony of flavors in every bite.
