Ingredients:

  • 1 baguette, cubed (250g)
  • 1 block of extra firm tofu, cubed (350g)
  • 2 tablespoons of white miso paste (30g)
  • 3 eggs
  • 1 cup of milk (240ml)
  • 1/2 cup of grated Parmesan cheese (50g)
  • 2-3 green onions, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of butter (30g)
  • Salt and pepper to taste

I start by preheating the oven to 350°F (180°C) and greasing a baking dish. In a frying pan, I melt the butter and sauté the garlic until fragrant. Then, I add the tofu cubes and miso paste, coating the tofu evenly with the miso. I cook until the tofu is slightly browned, then set it aside.

In a mixing bowl, I whisk together the eggs, milk, Parmesan cheese, salt, and pepper. I add the cubed baguette and green onions, mixing everything until the bread is well coated in the egg mixture. Next, I gently fold in the miso glazed tofu, making sure it is evenly distributed throughout the mixture.

I pour the mixture into the greased baking dish, spreading it out evenly. I bake the bread pudding for about 30-35 minutes until the top is golden brown and the mixture is set. Once it’s done, I let it cool for a few minutes before slicing and serving.

This savory bread pudding weighs approximately 800 grams and serves 4 hungry individuals. Each serving is about 200 grams and contains around 350 calories.
