Today, I’m excited to share a fun and unique dessert recipe that combines the rich flavors of tiramisu with a fruity twist of raspberry. This recipe is perfect for any occasion when you want to impress your guests or simply treat yourself to something special.

Ingredients:

  • 150g ladyfingers
  • 250g mascarpone cheese
  • 200g raspberries
  • 200ml brewed espresso, cooled
  • 100g sugar
  • 1 tsp vanilla extract
  • 150ml whipped cream
  • for dusting

Kitchen Tools:

To start, combine the mascarpone cheese, sugar, and vanilla extract in a mixing bowl. Whisk until smooth and creamy. In a separate bowl, gently fold the whipped cream into the mascarpone mixture until well combined.

In a shallow dish, pour the cooled espresso. Quickly dip each ladyfinger into the espresso, making sure not to soak them for too long. Place the soaked ladyfingers at the bottom of each ramekin, creating a layer of ladyfingers.

Next, spoon a layer of the mascarpone and whipped cream mixture on top of the ladyfingers in each ramekin. Add a layer of fresh raspberries on top of the cream mixture. Repeat the layers of ladyfingers, cream mixture, and raspberries until the ramekins are filled to the top.

Once assembled, dust the top of each tiramisu cup with cocoa powder for a finishing touch. Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.

After chilling, remove the plastic wrap and serve the raspberry tiramisu cups chilled. The combination of rich mascarpone, espresso-soaked ladyfingers, and fresh raspberries creates a delightful and refreshing dessert that is sure to impress your guests.
