Ingredients:

  • olive oil
  • onion
  • bell pepper
  • garlic cloves
  • canned diced tomatoes
  • smoked paprika
  • cumin
  • chili powder
  • eggs
  • feta cheese
  • fresh parsley
  • salt and pepper

  • skillet
  • spatula

To start, heat some olive oil in a skillet and sauté chopped onions, bell peppers, and minced garlic until softened. Add in canned diced tomatoes, smoked paprika, cumin, and chili powder, and let the mixture simmer for a few minutes to allow the flavors to meld together.

Create small wells in the tomato mixture and crack eggs into them. Cover the skillet and let the eggs cook to your desired doneness. Sprinkle crumbled feta cheese over the top and garnish with chopped fresh parsley. Season with salt and pepper to taste.
