Decadent Desserts: Blackberry Lavender Cheesecake Bars

Today, I’m excited to share a recipe that combines the sweet, tangy flavor of blackberries with the delicate floral notes of lavender. These Blackberry Lavender Cheesecake Bars are a perfect treat for a summer gathering or special occasion. The creamy cheesecake filling paired with the rich base and burst of berries will leave your taste buds in awe.

Ingredients:

  • 150g unsalted butter, melted
  • 200g digestive biscuits, crushed
  • 200g fresh blackberries
  • 250g cream cheese, softened
  • 100g granulated sugar
  • 2 large eggs
  • 1 tablespoon dried lavender
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Kitchen Tools:

  • 9×9 inch baking pan
  • mixing bowl
  • hand mixer
  • saucepan

To start, preheat your oven to 350°F (180°C) and line the baking pan with parchment paper. In a mixing bowl, combine the melted butter and crushed digestive biscuits until well mixed. Press the mixture evenly into the bottom of the pan to form the crust and bake for 10 minutes.

While the crust is baking, heat the blackberries in a saucepan over low heat until they soften and release their juices. Remove from heat and mash the berries with a fork, then set aside to cool.

In a separate bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, cornstarch, and dried lavender until fully incorporated.

Pour the cream cheese mixture over the baked crust and spread it evenly. Spoon the mashed blackberries on top of the cream cheese layer, creating a swirl pattern with a knife for a marbled effect.

Bake the cheesecake bars for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours to set.

Serve the Blackberry Lavender Cheesecake Bars chilled, cut into squares. Each bite is a delightful combination of creamy, fruity, and floral flavors that is sure to impress your guests.

One clever tip for this recipe is to sprinkle a bit of dried lavender on top of the bars before serving to enhance the floral aroma and add a pop of color.
