These Blackberry Lavender Cheesecake Bars are a perfect treat for a summer gathering or special occasion. The creamy cheesecake filling paired with the rich base and burst of berries will leave your taste buds in awe.

Ingredients:

  • 150g unsalted butter, melted
  • 200g digestive biscuits, crushed
  • 200g fresh blackberries
  • 250g cream cheese, softened
  • 100g granulated sugar
  • 2 large eggs
  • 1 tablespoon dried lavender
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

While the crust is baking, heat the blackberries in a saucepan over low heat until they soften and release their juices. Remove from heat and mash the berries with a fork, then set aside to cool.

In a separate bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, cornstarch, and dried lavender until fully incorporated.

Pour the cream cheese mixture over the baked crust and spread it evenly. Spoon the mashed blackberries on top of the cream cheese layer, creating a swirl pattern with a knife for a marbled effect.

Bake the cheesecake bars for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours to set.
