Today’s Unique Creation: Tangy Mango Coconut Curry

I’m excited to share this flavorful and exotic recipe with you today, perfect for adding a little tropical twist to your dinner table. As the mango season is in full swing, I couldn’t resist creating a dish that combines the sweetness of ripe mangoes with the creaminess of coconut milk and a hint of tangy goodness.

For this tangy mango coconut curry, you’ll need the following ingredients:

  • 2 ripe mangoes (diced)
  • 400ml coconut milk
  • 300g chicken breast (sliced)
  • 1 bell pepper (sliced)
  • 1 onion (chopped)
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 1 tsp turmeric powder
  • 1 tbsp curry powder
  • 1 tsp chili flakes
  • Salt and pepper to taste
  • Fresh cilantro (chopped) for garnish

To bring this dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • grater
  • measuring spoons

Start by heating some oil in a large skillet over medium heat. Add the chopped onions, minced garlic, and grated ginger, and sauté until fragrant. Add the sliced chicken breast and cook until browned on all sides.

Next, stir in the turmeric powder, curry powder, and chili flakes, coating the chicken evenly. Pour in the coconut milk and diced mangoes, stirring to combine. Let the curry simmer for about 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.

Once the curry has thickened slightly, add the sliced bell pepper and season with salt and pepper to taste. Cook for another 5 minutes until the peppers are tender-crisp.

To serve, garnish the tangy mango coconut curry with freshly chopped cilantro. This dish pairs perfectly with steamed jasmine rice or fluffy naan bread to soak up all the delicious sauce.

Approximate total weight of the cooked dish: 1200g
Approximate number of servings: 4
Average weight of one serving: 300g
Approximate calorie count per serving: 380 calories

One unique tip for this recipe is to add a squeeze of fresh lime juice right before serving to brighten up the flavors and add an extra layer of tanginess.

I hope you enjoy trying out this tangy mango coconut curry recipe and feel free to experiment with different proteins or vegetables to make it your own. Happy cooking!
