Ingredients:

  • 200g Arborio rice
  • 300g pumpkin, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 liter vegetable broth
  • 200ml white wine
  • 50g Parmesan cheese, grated
  • 50g butter

To start, heat the vegetable broth in a saucepan and keep it warm on the stove. In another large saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant. Stir in the Arborio rice, toasting it slightly before adding the white wine.

Once the wine has been absorbed, begin adding the warm vegetable broth one ladleful at a time, stirring continuously until each ladleful is absorbed. This process will take about 20 minutes, resulting in a creamy and tender risotto.

While the risotto cooks, roast the diced pumpkin in the oven until tender and caramelized. You can also steam the pumpkin if preferred. Once the risotto is cooked to your desired consistency, stir in the roasted pumpkin and grated Parmesan cheese. Season with salt and pepper to taste.

Serve the Creamy Pumpkin Risotto hot, garnished with fresh parsley for a pop of color and freshness. Each bite combines the creamy richness of the risotto with the sweet, earthy flavors of the pumpkin, making it a perfect fall comfort food dish.
