  • 2 medium acorn squash, halved and seeded
  • 1 cup quinoa, cooked
  • 1 can of chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

To prepare this dish, begin by preheating your oven to 400°F (200°C). Place the halved acorn squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 30 minutes, or until the squash is tender.

While the squash is roasting, heat olive oil in a skillet over medium heat. Add the diced red pepper, red onion, and garlic, sautéing until softened. Stir in the cooked quinoa, chickpeas, cumin, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

Once the squash is tender, remove it from the oven and fill each squash half with the quinoa and chickpea mixture. Return the squash to the oven and bake for another 10-15 minutes, until heated through.
