Introducing: Fall Harvest Stuffed Squash

Today, I’m excited to share a new recipe that captures the essence of fall with its warm, comforting flavors and hearty ingredients. This Fall Harvest Stuffed Squash is a delicious way to celebrate the season and enjoy a wholesome meal that’s perfect for cooler evenings.

For this recipe, you’ll need the following ingredients:

  • 2 medium acorn squash, halved and seeded
  • 1 cup quinoa, cooked
  • 1 can of chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

To prepare this dish, begin by preheating your oven to 400°F (200°C). Place the halved acorn squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 30 minutes, or until the squash is tender.

While the squash is roasting, heat olive oil in a skillet over medium heat. Add the diced red pepper, red onion, and garlic, sautéing until softened. Stir in the cooked quinoa, chickpeas, cumin, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

Once the squash is tender, remove it from the oven and fill each squash half with the quinoa and chickpea mixture. Return the squash to the oven and bake for another 10-15 minutes, until heated through.

Serve the Fall Harvest Stuffed Squash garnished with fresh parsley for a pop of color and freshness. This dish is perfect for a cozy night in or a festive fall gathering.

Total weight of cooked dish: 1200 grams

One unique tip for this recipe is to sprinkle some crumbled feta cheese on top of the stuffed squash before serving. The tangy flavor of the feta perfectly complements the earthy tones of the dish, adding an extra layer of depth to each bite.

I encourage you to give this Fall Harvest Stuffed Squash recipe a try and make it your own by experimenting with different seasonal ingredients or spices. Enjoy the flavors of fall with this hearty and nutritious dish!
