Carrot Cake Pancakes with Cream Cheese Drizzle

Today, I’m sharing a recipe that combines two of my favorite things: carrot cake and pancakes. This dish is perfect for a cozy weekend brunch or a special treat any day of the week. The warm spices, fluffy texture, and creamy drizzle make these pancakes a true delight for the taste buds.

Ingredients:

  • 2 medium carrots, grated (200g)
  • 1 cup all-purpose flour (120g)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 cup milk (240ml)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • 4 ounces cream cheese, softened (120g)
  • 1/4 cup powdered sugar (30g)

To prepare the pancake batter, start by combining the grated carrots, flour, baking powder, cinnamon, nutmeg, ginger, salt, and brown sugar in a mixing bowl. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. Slowly pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a skillet over medium heat and lightly grease with butter or cooking spray. Pour a ladleful of batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter.

To make the cream cheese drizzle, use a hand mixer to beat together the softened cream cheese and powdered sugar until smooth. Drizzle the mixture over the warm pancakes just before serving.

This recipe makes approximately 8 pancakes with a total weight of 800g. It serves 4 people, with each serving weighing about 200g and containing approximately 300 calories.

One unusual tip to make these pancakes even more delicious is to toast the grated carrots in a skillet for a few minutes before adding them to the batter. This will intensify their flavor and add a hint of caramelization to the pancakes.
