Today, I’m excited to share a unique and delicious dish inspired by the vibrant colors of summer. This recipe combines unexpected flavors and textures to create a memorable dining experience that’s perfect for a special occasion or a cozy night in.

Ingredients:

  • purple potatoes (400g)
  • beetroot (200g)
  • fennel bulb (150g)
  • goat cheese (100g)
  • walnuts (50g)
  • balsamic vinegar
  • honey
  • olive oil
  • salt
  • pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • vegetable peeler
  • mixing bowl

Preparation:

Start by preheating your oven to 200°C. Wash and scrub the purple potatoes and beetroot, then peel and dice them into bite-sized pieces. Slice the fennel bulb and crumble the goat cheese. Spread the potatoes, beetroot, and fennel on a baking sheet, drizzle with olive oil, salt, and pepper, and roast in the oven for 30 minutes until tender.

In a small bowl, mix balsamic vinegar and honey to create a glaze. In a separate pan, toast the walnuts until fragrant. Once the vegetables are roasted, drizzle the balsamic glaze over them and toss to coat. Sprinkle with crumbled goat cheese and toasted walnuts.

Serving:

This colorful and flavorful dish weighs approximately 900g once cooked. It serves 4 people, with each serving weighing around 225g. Each serving is approximately 300 calories.
