Today’s Unique Recipe: Roasted Vegetable and Quinoa Stuffed Bell Peppers

I love experimenting with different ingredients to create new and exciting dishes. Today, I’m sharing a recipe for Roasted Vegetable and Quinoa Stuffed Bell Peppers that is perfect for a cozy dinner at home. The combination of hearty quinoa, flavorful roasted vegetables, and sweet bell peppers creates a dish that is both satisfying and delicious.

Ingredients:

  • 5 medium red bell peppers
  • 200g quinoa
  • 1 large zucchini, diced
  • 150g mushrooms, sliced
  • 100g cherry tomatoes, halved
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • Handful of fresh basil, chopped

Kitchen Tools:

To start, preheat your oven to 200°C. Cut the tops off the bell peppers and remove the seeds and membranes. Place them on a baking sheet and roast in the oven for 15 minutes.

Meanwhile, cook the quinoa according to the package instructions in a saucepan. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic and sauté until fragrant. Add the zucchini, mushrooms, and cherry tomatoes, cooking until they are tender.

Once the vegetables are cooked, add the cooked quinoa to the pan. Season with salt, pepper, paprika, and fresh basil. Stir everything together until well combined.

Remove the bell peppers from the oven and carefully fill each one with the quinoa and vegetable mixture. Drizzle the remaining olive oil over the top of the stuffed peppers.

Return the peppers to the oven and bake for an additional 15 minutes, or until the peppers are tender. Serve hot and enjoy!

The total weight of the cooked dish is approximately 1200g, with 5 servings. Each serving is around 240g, with an estimated calorie count of 300 per serving.

Clever Tip:

For an extra flavor boost, try adding some crumbled feta cheese or a dollop of Greek yogurt on top of the stuffed peppers before serving. It will add a creamy and tangy element to the dish that takes it to the next level.
