As the weather cools down and fall sets in, I find myself craving warm, comforting dishes that capture the essence of the season. Today, I’m excited to share my recipe for a unique and delicious Savory Coconut Squash Tart. This dish combines the rich sweetness of winter squash with the subtle tropical flavor of coconut, creating a savory tart that’s perfect for a cozy night in or a special occasion with friends.

Ingredients:

  • butternut squash, peeled and cubed (500g)
  • coconut milk (200ml)
  • red onion, thinly sliced (1)
  • fresh rosemary, chopped (2 tbsp)
  • gruyere cheese, grated (150g)
  • puff pastry (1 sheet)
  • olive oil
  • salt and pepper to taste

Kitchen Tools:

  • pastry brush

Preparation:

Start by preheating your oven to 200°C (400°F). Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes until the squash is tender and slightly caramelized.

While the squash is roasting, heat a tablespoon of olive oil in a pan and sauté the sliced red onion until soft and translucent. Add the chopped rosemary and coconut milk to the pan, and simmer for a few minutes until the mixture is fragrant and slightly thickened.

Roll out the puff pastry on a lightly floured surface to fit a tart tin, then prick the base with a fork. Spread the onion and coconut mixture over the pastry base, then top with the roasted butternut squash and grated gruyere cheese.

Bake the tart in the preheated oven for 20-25 minutes until the pastry is golden and the cheese is bubbly and melted. Serve warm, garnished with a sprig of fresh rosemary.

Tips:

For an extra touch of sweetness, try adding a drizzle of honey over the top of the tart before serving. The combination of flavors is truly divine!
