Crispy Quinoa-Stuffed Bell Peppers

Today, I’m excited to share a recipe for crispy quinoa-stuffed bell peppers that’s perfect for a light and healthy midweek dinner. The combination of fluffy quinoa, savory vegetables, and a crunchy topping will surely satisfy your taste buds while keeping you on track with your health goals.

Ingredients

  • 3 medium red bell peppers
  • 1 cup quinoa
  • 200g cherry tomatoes, halved
  • 100g spinach, chopped
  • 50g feta cheese, crumbled
  • 50g almonds, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • to taste

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them on a baking sheet and bake for 15 minutes until slightly softened.

Meanwhile, cook the quinoa according to package instructions in a saucepan. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, spinach, feta cheese, almonds, garlic, olive oil, salt, and black pepper. Mix well to combine all the ingredients.

Once the bell peppers are slightly softened, remove them from the oven and carefully stuff them with the quinoa mixture. Return them to the oven and bake for an additional 20 minutes until the peppers are tender and the quinoa mixture is crispy on top.

Serve the crispy quinoa-stuffed bell peppers hot, garnished with some extra feta cheese and chopped almonds for added crunch.
