Autumn is upon us, and with the season comes the abundance of hearty vegetables and warm, comforting flavors. Today, I am excited to share with you my recipe for Harvest Stuffed Acorn Squash, a delicious and unique dish that perfectly captures the essence of fall.

To create this dish, you will need the following ingredients:

  • acorn squash
  • farro
  • apple
  • dried cranberries
  • pecans
  • red onion
  • garlic
  • cinnamon
  • nutmeg
  • salt and pepper
  • olive oil

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • baking sheet
  • saucepan
  • spoon

Start by preheating your oven to 400°F (200°C). Cut the acorn squashes in half lengthwise and scoop out the seeds. Place them cut side down on a baking sheet lined with parchment paper and roast in the oven for about 30-40 minutes, or until tender.

In the meantime, cook the farro according to package instructions in a medium saucepan. Once cooked, set aside.

In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced apple, dried cranberries, chopped pecans, red onion, garlic, cinnamon, nutmeg, salt, and pepper. Cook until the ingredients are softened and fragrant.

Combine the cooked farro with the cooked apple mixture in the skillet and stir until well mixed. Remove the roasted acorn squash from the oven and carefully fill each squash half with the farro and apple stuffing.

Return the stuffed squash to the oven and bake for an additional 10-15 minutes, allowing the flavors to meld together.

Once done, remove from the oven and serve hot. Each bite is a perfect balance of savory and sweet, with the tender squash, hearty farro, and flavorful spices coming together in a delightful way.
