This morning, I woke up craving a warm, cozy breakfast treat that would bring a burst of flavor to start my day off right. I decided to whip up a batch of my unique Persimmon Morning Glory Muffins, filled with a delightful combination of sweet persimmon, crunchy carrots, and warm spices. These muffins are perfect for a leisurely weekend breakfast or a quick grab-and-go snack during the week.

Ingredients:

  • 1 ripe persimmon, peeled and pureed (about 150g)
  • 1 large carrot, grated (about 100g)
  • 200g all-purpose flour
  • 100g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 100ml vegetable oil
  • 50g chopped pecans

I preheated my oven to 350°F (180°C) and lined a muffin tin with paper liners. In a large mixing bowl, I combined the flour, sugar, baking powder, baking soda, cinnamon, ginger, and salt. In a separate bowl, I whisked together the pureed persimmon, grated carrot, eggs, vanilla extract, and vegetable oil until well combined.

Next, I gradually added the wet ingredients to the dry ingredients, stirring gently until just combined. I folded in the chopped pecans for a lovely crunch in every bite. I scooped the batter into the prepared muffin tin, filling each cup about two-thirds full.

I popped the muffins into the oven and baked them for 20-25 minutes, until they were golden brown and a toothpick inserted into the center came out clean. The kitchen filled with the warm, inviting aroma of cinnamon and ginger as the muffins baked to perfection.

Once the muffins were done, I let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. The combination of sweet persimmon, earthy carrots, and warm spices created a flavor profile that was truly delightful.
