Indulge in Exotic Mango Curry with Grilled Shrimp: A

Today’s Special: Exotic Mango Curry with Grilled Shrimp

As the weather starts to warm up, I find myself craving light and flavorful dishes that transport me to tropical destinations. One of my absolute favorite recipes to make on a sunny day is this exotic mango curry with grilled shrimp. The combination of juicy mango, creamy coconut milk, and aromatic spices is truly a delight for the senses.

Ingredients:

  • 3 ripe mangoes (diced)
  • 500g large shrimp (peeled and deveined)
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 2 stalks lemongrass (sliced)
  • Handful of fresh basil leaves
  • Juice of 1 lime
  • 2 tbsp coconut sugar
  • Salt to taste
  • 2 tbsp olive oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • grill pan
  • wooden skewers
  • large saucepan

To start, marinate the shrimp with a mixture of red curry paste, lime juice, and olive oil. Thread the shrimp onto wooden skewers and grill them on a hot grill pan until cooked through and slightly charred.

In a large saucepan, heat some olive oil and sauté the lemongrass until fragrant. Add the diced mangoes and cook until they start to soften. Pour in the coconut milk, coconut sugar, and a pinch of salt. Let the curry simmer for a few minutes to allow the flavors to meld together.

Once the curry has thickened slightly, add the grilled shrimp to the saucepan and stir gently to coat them in the creamy mango curry.

Serve the exotic mango curry with grilled shrimp over steamed jasmine rice, garnished with fresh basil leaves for a pop of color and flavor.
