  • kiwano melon (1)
  • goat cheese (150g)
  • pistachios (50g)
  • microgreens (a handful)

Preparation

I’ll start by preheating the oven to 400°F (200°C). Next, I’ll wash and scrub the purple potatoes before slicing them into thin rounds. I’ll arrange the potato slices on a baking sheet and drizzle them with olive oil, salt, and pepper. Then, I’ll roast them in the oven for about 20-25 minutes until they’re crispy and golden brown.
