Today’s Special: Crispy Parmesan Zucchini Chips

As the summer heat starts to fade and the air becomes crisper, I find myself craving a light and crunchy snack to enjoy in the afternoon. That’s why today, I’m sharing my recipe for crispy Parmesan zucchini chips. These savory treats are a perfect way to use up all the zucchinis from your garden or local farmers’ market.

For this recipe, you’ll need medium-sized zucchinis, Parmesan cheese, fresh rosemary, and a few other pantry staples. The secret ingredient that gives these chips their irresistible crunch is ground almonds, which adds a nutty flavor and a satisfying texture.

Ingredients:

  • 2 medium zucchinis, thinly sliced
  • 50g Parmesan cheese, grated
  • 75g ground almonds
  • 2 tbsp fresh rosemary, finely chopped
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • baking sheet
  • parchment paper
  • mixing bowl
  • chef’s knife
  • grater

To start, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the grated Parmesan cheese, ground almonds, chopped rosemary, minced garlic, olive oil, salt, and pepper. Mix until well combined.

Next, dip each zucchini slice into the Parmesan mixture, coating both sides evenly. Place the coated slices on the prepared baking sheet in a single layer. Bake in the preheated oven for 15-20 minutes, or until the zucchini chips are golden and crispy.

Once out of the oven, let the zucchini chips cool for a few minutes before serving. The combination of the savory Parmesan, nutty almonds, and fragrant rosemary creates a delicious flavor profile that is sure to impress your taste buds.

This recipe makes approximately 4 servings, with each serving weighing around 120g. One serving of these crispy Parmesan zucchini chips is about 180 calories.

Clever Tip:

If you want to add an extra kick of flavor to these zucchini chips, try sprinkling a pinch of smoked paprika over them before baking. The smoky notes will complement the Parmesan and almonds beautifully.

I hope you enjoy making and snacking on these crispy Parmesan zucchini chips as much as I do. Feel free to experiment with different herbs and seasonings to make this recipe your own. Happy snacking!
