Cozy Up with Autumn Harvest Risotto: A Creamy Celebration of Fall

Autumn Harvest Risotto

Today, I’m sharing a comforting dish perfect for the crisp autumn weather. This Autumn Harvest Risotto is a celebration of seasonal ingredients and flavors that come together beautifully in a warm and creamy dish.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash, diced (400g)
  • Brussels sprouts, shaved (200g)
  • Shiitake mushrooms, sliced (150g)
  • Fresh sage leaves, chopped (10g)
  • Grated Parmesan cheese (100g)
  • Chicken or vegetable broth (1 liter)
  • Butter (50g)
  • Olive oil (30ml)
  • Salt and pepper to taste

Kitchen Tools:

  • Chef’s knife
  • Cutting board
  • Wooden spoon
  • Large saucepan
  • Grater

To start, heat the olive oil in a large saucepan over medium heat. Add the diced butternut squash and cook until slightly tender. Then, add the shaved Brussels sprouts and sliced shiitake mushrooms, cooking until they begin to caramelize.

Next, add the Arborio rice to the saucepan and stir to coat the grains with the vegetables and oil. Begin adding the chicken or vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process will take about 20-25 minutes until the rice is creamy and cooked to al dente.

As the risotto cooks, stir in the chopped sage and grated Parmesan cheese. Season with salt and pepper to taste. Once everything is well combined and the consistency is creamy, remove the saucepan from the heat and stir in the butter until melted.

Serve the Autumn Harvest Risotto hot, garnished with additional Parmesan cheese and fresh sage leaves.
