Spicy Mango Chicken Curry

Today, I’m excited to share a recipe that combines the sweetness of mango with the heat of spices in a delicious curry dish. This spicy mango chicken curry is perfect for a cozy night in or for impressing guests with a unique and flavorful meal.

Ingredients:

<li data-ingredient="boneless, skinless chicken breast (cut into cubes) – 400g

    <li data-ingredient="mango (peeled and diced) – 1 large

    <li data-ingredient="coconut milk – 400ml

    <li data-ingredient="onion (finely chopped) – 1 medium

    <li data-ingredient="garlic (minced) – 3 cloves

    <li data-ingredient="ginger (grated) – 1 tablespoon

    <li data-ingredient="curry powder – 2 tablespoons

    <li data-ingredient="chili powder – 1 teaspoon

    <li data-ingredient="coriander (chopped) – 2 tablespoons

<li data-ingredient="salt and pepper to taste

    <li data-ingredient="cooking oil

Kitchen Tools:

Start by heating some cooking oil in a large skillet over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until the onions are translucent and fragrant. Next, add the chicken cubes to the skillet and cook until browned on all sides.

Once the chicken is cooked through, sprinkle the curry powder and chili powder over the chicken, stirring to coat evenly. Pour in the coconut milk and stir well to combine all the ingredients. Let the curry simmer for about 15 minutes, allowing the flavors to meld together.

After the curry has thickened slightly, add the diced mango to the skillet and gently stir it into the sauce. Cook for an additional 5 minutes, allowing the mango to soften and infuse its sweetness into the curry. Season with salt and pepper to taste.

To finish, sprinkle the chopped coriander over the curry for a burst of freshness and color. Serve the spicy mango chicken curry hot over steamed rice or with some warm naan bread.

The approximate total weight of the cooked dish is 1000g, with 4 servings. Each serving weighs around 250g, with an approximate calorie count of 350 per serving.

One clever tip for this dish is to add a splash of lime juice at the end to brighten up the flavors and cut through the richness of the coconut milk.

I encourage you to give this spicy mango chicken curry a try and make it your own by adjusting the spice level to suit your taste preferences. Enjoy!
