This dish is perfect for a light summer meal or whenever you’re craving something exotic and flavorful.

Ingredients:

  • firm tofu (250g), cubed
  • ripe mango (1), diced
  • red bell pepper (1), sliced
  • green beans (100g), trimmed
  • garlic (2 cloves), minced
  • ginger (1-inch piece), grated
  • jalapeno (1), thinly sliced
  • lime (1), juiced
  • soy sauce (2 tbsp)
  • sesame oil (1 tbsp)
  • brown sugar (1 tbsp)
  • cornstarch (1 tbsp)
  • water (1/4 cup)
  • cooked rice, for serving

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • garlic press
  • grater
  • small bowl

To start, heat some oil in a wok over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the wok and set it aside.

In the same wok, add a bit more oil and sauté the garlic, ginger, and jalapeno until fragrant. Add the bell pepper, green beans, and diced mango, and cook until slightly tender.

In a small bowl, whisk together the soy sauce, sesame oil, lime juice, brown sugar, cornstarch, and water. Pour this mixture into the wok and stir well to combine. Allow the sauce to thicken.

Add the cooked tofu back to the wok and toss everything together until heated through. Serve the spicy mango tofu stir-fry over cooked rice.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving is around 200g. The estimated calorie count per serving is 300 calories.

One clever tip for this dish is to add a handful of roasted cashews for an extra crunch and nutty flavor. It takes the stir-fry to the next level!
