These Pineapple Peanut Butter Stuffed Bell Peppers are a delightful mix of sweet and savory, guaranteed to surprise your taste buds and leave you craving more. Ingredients:

  • 3 yellow bell peppers
  • 1 cup cooked quinoa
  • 1/2 cup canned pineapple chunks
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 green onions, thinly sliced
  • 2 tbsp chopped peanuts
  • 1/2 tsp red pepper flakes

Mix everything together until well combined.

Stuff each bell pepper with the quinoa mixture, packing it down tightly. Place the stuffed bell peppers on a baking sheet and bake in the preheated oven for 25-30 minutes or until the peppers are tender.
