Hey there foodies, today I am excited to share with you a unique breakfast recipe that I recently concocted in the midst of a rainy morning. This dish is perfect for those who crave a balance of sweet and savory flavors to kickstart their day. So let’s get right to it!

Ingredients:

  • 1 ripe mango (200g, diced)
  • 4 strips of crispy bacon (100g, chopped)
  • 50g of crumbled feta cheese
  • 2 tablespoons of honey
  • 4 eggs
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • frying pan
  • spatula
  • knife

I start by heating a frying pan over medium heat and adding a tablespoon of olive oil. Once the pan is hot, I add the chopped bacon and cook until it’s nice and crispy.

Next, I push the bacon to one side of the pan and crack in the eggs, cooking them to my preference – in this case, sunny-side up with a runny yolk. Sprinkle the eggs with a pinch of salt and pepper for seasoning.

While the eggs are cooking, I assemble the dish. I layer the diced mango and crumbled feta cheese on a plate, creating a vibrant and flavorful base.

Once the eggs are done, I carefully place them on top of the mango and feta mixture. I then drizzle everything with honey, creating a beautiful balance of sweet and savory flavors.

Clever Tip:

For an extra burst of flavor, try adding a sprinkle of smoked paprika on top of the eggs before serving. The smoky spice will take this dish to a whole new level!
