Ingredients:

  • 200g chicken breast, diced
  • 150g fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced

To start, heat some oil in a skillet over medium heat. Add the diced chicken breast and cook until browned. Remove the chicken from the skillet and set aside. In the same skillet, sauté the chopped onion, minced garlic, and grated ginger until fragrant.

Next, add the sliced red bell pepper and curry powder to the skillet. Cook for a few minutes until the pepper starts to soften. Then, pour in the coconut milk, lime juice, chili flakes, salt, and black pepper. Stir everything together before adding the cooked chicken back into the skillet.

Finally, add the fresh pineapple chunks to the curry mixture and simmer for a few more minutes to let the flavors meld together. Serve the tangy pineapple curry over steamed rice and garnish with fresh cilantro for a burst of freshness.
