### Recipe: Harvest Apple and Butternut Squash Lasagna

– 1 butternut squash (approx. 800g)
– 2 apples, peeled and thinly sliced (approx. 300g)
– 200g ricotta cheese
– 1/2 cup chopped walnuts
– 1/2 cup grated Parmesan cheese
– 1/2 cup fresh sage leaves
– 1/2 cup heavy cream
– Salt and pepper to taste
– Lasagna noodles (enough for 2 layers)
– Olive oil

Preparation

Start by preheating your oven to 375°F (190°C). Peel and slice the butternut squash into thin rounds, then drizzle with olive oil and season with salt and pepper. Roast in the oven for about 20 minutes until tender.

In a mixing bowl, combine the ricotta cheese, chopped walnuts, grated Parmesan cheese, and a handful of torn sage leaves. Season with salt and pepper to taste.
