  • butternut squash (500g)
  • quinoa (200g)
  • dried cranberries (150g)
  • feta cheese (100g)
  • pumpkin seeds (1/4 cup)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • salt and pepper to taste

Preparation:

Start by preheating your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes and spread them out on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon, nutmeg, salt, and pepper. Roast in the oven for 25-30 minutes, or until the squash is tender.
