Hey there, foodies! Today I am sharing a delightful recipe that is perfect for the cozy autumn season. As the leaves start to change colors and the air becomes crisp, I love to indulge in comforting dishes that warm the soul. This recipe combines unexpected flavors for a unique and delicious autumn treat.

Ingredients:

  • butternut squash (500g)
  • quinoa (200g)
  • dried cranberries (150g)
  • feta cheese (100g)
  • pumpkin seeds (1/4 cup)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • salt and pepper to taste

Kitchen Tools:

  • baking sheet
  • knife
  • medium saucepan
  • mixing bowl
  • fork

Preparation:

Start by preheating your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes and spread them out on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon, nutmeg, salt, and pepper. Roast in the oven for 25-30 minutes, or until the squash is tender.

While the squash is roasting, cook the quinoa according to package instructions in a medium saucepan. Once cooked, fluff it with a fork and transfer to a mixing bowl. Add in the dried cranberries, crumbled feta cheese, and pumpkin seeds.

Once the butternut squash is done roasting, let it cool slightly before adding it to the quinoa mixture. Gently fold everything together until well combined. Adjust seasoning with salt and pepper as needed.

Serving:

Serve this autumn quinoa salad warm or at room temperature as a side dish or a light meal. The flavors of the roasted squash, sweet cranberries, and creamy feta cheese complement each other perfectly for a satisfying bite.

Tips:

For an extra pop of flavor, try drizzling a balsamic glaze over the salad before serving. The tangy sweetness adds another layer of depth to the dish.
