Today, I am excited to share a unique and flavorful dish that combines unexpected ingredients for a truly special meal. I was inspired by the changing seasons and wanted to create something comforting yet adventurous at the same time.

For this recipe, you will need the following ingredients:

  • purple sweet potatoes (300g)
  • cumin-spiced chickpeas (200g)
  • miso-glazed tofu (150g)
  • pickled radishes (100g)
  • avocado yogurt sauce (50g)

Be sure to have these kitchen tools on hand:

  • chef’s knife
  • cutting board
  • oven
  • skillet
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Wash and pierce the purple sweet potatoes with a fork, then place them on a baking sheet and roast for about 45 minutes, or until tender.

While the sweet potatoes are cooking, heat a skillet over medium heat and add the cumin-spiced chickpeas. Cook for 5-7 minutes until they are crispy and golden brown. In a separate skillet, sear the miso-glazed tofu on each side until caramelized.

Once the sweet potatoes are done, remove them from the oven and allow them to cool slightly. In a mixing bowl, mash the flesh of the sweet potatoes with a fork until smooth.
