As we transition into the warmer months, I find myself craving light and fresh flavors that remind me of vacation. Today, I’m excited to share a unique recipe for Thai-inspired shrimp tacos that combine the bold and aromatic spices of Thailand with the familiar comfort of a classic taco.

To start, gather the following ingredients:

  • 300g shrimp, peeled and deveined
  • 200ml coconut milk
  • 1 stalk lemongrass, bruised
  • 2 tbsp red curry paste
  • Juice of 1 lime
  • Handful of fresh cilantro, chopped
  • 4 small flour tortillas
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • Crushed peanuts for garnish

Prepare your kitchen tools:

  • grater

In a skillet over medium heat, combine coconut milk, lemongrass, and red curry paste. Simmer for 5 minutes until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove from heat and stir in lime juice and cilantro.

Warm the tortillas in a dry skillet until slightly charred. Fill each tortilla with the shrimp mixture, shredded cabbage, and julienned carrots. Top with crushed peanuts for added crunch.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving weighs around 200g and contains approximately 300 calories.

One unique tip for these Thai-inspired shrimp tacos is to marinate the shrimp in the red curry paste for an hour before cooking. This extra step adds depth of flavor and helps the spices penetrate the shrimp more effectively.
