Ingredients

– 300g butternut squash, peeled and diced
– 200g brussels sprouts, halved
– 1 medium apple, sliced
– 150g quinoa, rinsed
– 1/2 red onion, thinly sliced
– 2 cloves of garlic, minced
– 1 tsp cumin
– 1/2 tsp cinnamon
– Salt and pepper to taste
– Olive oil

Preparation

In the meantime, cook the quinoa according to package instructions. In a large skillet, heat some olive oil over medium heat. Add the red onion and garlic, cooking until softened and fragrant. Stir in the cooked quinoa, roasted vegetables, and apple slices. Cook for an additional 5 minutes, allowing the flavors to meld together.

Serving

Once everything is well combined and heated through, season with additional salt and pepper if needed. Serve the Autumn quinoa mix warm, garnished with a sprinkle of fresh herbs or a drizzle of balsamic glaze for an extra touch of flavor.
