Ingredients:

  • 2 medium sweet potatoes (400g)
  • 3 ripe pears (300g)
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tbsp brown sugar
  • 1 sheet of puff pastry (200g)
  • 1 egg, beaten

Start by preheating your oven to 375°F (190°C). Peel and thinly slice the sweet potatoes and pears, then place them in a large bowl. Drizzle the honey over the slices and sprinkle with cinnamon, nutmeg, and brown sugar. Toss gently to coat the fruit evenly.

Roll out the puff pastry sheet on a lightly floured surface into a rectangular shape. Arrange the sweet potato and pear slices in the center of the pastry, leaving a border of about 2 inches. Fold the edges of the pastry over the filling, creating a rustic galette shape.

Brush the pastry crust with the beaten egg to achieve a golden-brown color when baked. Transfer the galette to a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the fruit is tender.
