As the temperature rises outside, I find myself craving dishes that are both refreshing and satisfying. That’s why today, I’m excited to share with you my recipe for Spicy Mango Chicken Stir-Fry. This unique blend of flavors and textures is sure to tantalize your taste buds and leave you wanting more.

To begin, gather the following ingredients:

  • 200g chicken breast, thinly sliced
  • 1 ripe mango, cubed
  • 1 red bell pepper, sliced
  • 1 yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1 green chili, sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • 2 tbsp cooking oil
  • to taste

For this recipe, you will need the following kitchen tools:

  • wok
  • chef’s knife
  • cutting board
  • mixing bowl
  • wooden spoon

Start by heating the wok over medium-high heat and adding the cooking oil. Once hot, add the minced garlic and sliced chicken breast. Cook until the chicken is browned and cooked through, then remove from the wok and set aside.

In the same wok, add the chopped onion, sliced bell pepper, and green chili. Stir-fry until the vegetables are slightly softened. Add back the cooked chicken, along with the soy sauce, fish sauce, sriracha sauce, rice vinegar, brown sugar, and sesame oil. Mix well to combine all the flavors.

Finally, add the cubed mango to the wok and stir gently to incorporate. Cook for an additional 2-3 minutes until the mango is heated through but still maintains its shape. Season with salt and pepper to taste.

Once everything is cooked to perfection, serve the Spicy Mango Chicken Stir-Fry hot, garnished with fresh cilantro leaves. This dish weighs approximately 800g after cooking and serves 4. Each serving is around 200g, with an estimated calorie count of 300 per serving.
