  • 200g extra-firm tofu
  • 1 ripe mango
  • 8 small corn tortillas
  • 1 red bell pepper
  • 1 small red onion
  • 50g peanuts
  • a handful of fresh cilantro
  • 1 lime
  • 2 cloves of garlic
  • 30ml soy sauce
  • 15ml sriracha sauce
  • 30g peanut butter
  • 15ml olive oil

Start by pressing the tofu to remove excess water, then cut it into cubes. Heat olive oil in a frying pan and cook the tofu until it’s golden and crispy. In the meantime, chop the mango, red bell pepper, and red onion into small pieces and set aside.

To make the spicy peanut sauce, blend peanuts, garlic, lime juice, soy sauce, sriracha, and peanut butter until smooth. Adjust the consistency by adding water if needed.

Grill the corn tortillas until they’re warm and slightly charred. Fill each tortilla with tofu, mango, red bell pepper, and red onion. Drizzle the spicy peanut sauce over the tacos and garnish with fresh cilantro.
