Lemon Lavender Tart: A Refreshing and Aromatic Delight

Mood-Lifting Meyer Lemon and Lavender Tart

As we transition from summer to fall, I find myself craving bright, citrusy flavors to lift my spirits. Today, I’m excited to share with you my recipe for a Meyer lemon and lavender tart. This dessert is not only visually stunning but also incredibly refreshing and aromatic.

Ingredients:

  • 150g all-purpose flour
  • 100g cold butter, cubed
  • 50g powdered sugar
  • 2 eggs
  • 2 Meyer lemons
  • 1 tbsp dried culinary lavender
  • 100ml heavy cream
  • 50g honey

Kitchen Tools:

  • mixing bowl
  • food processor
  • tart pan
  • whisk

To start, preheat your oven to 350°F (180°C). In a food processor, combine the all-purpose flour, cold cubed butter, and powdered sugar. Pulse until the mixture resembles coarse crumbs. Add 1 beaten egg and continue mixing until the dough comes together. Press the dough into a tart pan, covering the bottom and sides evenly. Prick the bottom with a fork and bake for 15-20 minutes until lightly golden. Let it cool.

Meanwhile, in a mixing bowl, whisk together the juice and zest of 2 Meyer lemons, 1 beaten egg, heavy cream, and dried lavender. Pour this filling into the cooled tart shell and return it to the oven for 25-30 minutes until set.

In a small saucepan, warm the honey until it becomes runny. Brush this honey over the top of the tart for a beautiful glaze. Let the tart cool completely before slicing and serving.

This Meyer lemon and lavender tart weighs approximately 600g in total. It yields 8 servings, with each slice weighing around 75g. One serving of this tart is roughly 280 calories.

One unique tip for this tart is to sprinkle a little extra dried lavender on top of each slice just before serving. Not only does it add a pop of color, but it also enhances the floral notes of the lavender in the dessert.
